I can already feel my toes again, this recipe is just what Dr. Freeze ordered.

Black Bean and Rice Soup

WHAT YOU'LL NEED:

1 medium onion (chopped), 3 carrots (chopped), 2 stalks of celery (chopped), 4 gloves of garlic (chopped), 1/2 tsp ground cumin, 1 1/2 tsp dried basil, 1/2 tsp chili powder, 1/2 tsp dried oregano, 1/2 tsp chili sauce, 2 16oz cans of black beans (drained and rinsed), 1 14.5oz can of crushed tomatoes, 2 14.5oz cans of reduced sodium chicken broth, 1 1/2 cups rice (cooked) and shredded cheese for topping (sour cream would also be good)

PUTTING IT ALL TOGETHER:

Combine all ingredients in the crock pot, except the rice, cook on low for 8-10 hours or on high for 3-4 hours. Add the cooked rice just before serving.
