This has got to be one of the most classic combinations of all time, grilled cheese and tomato soup. Rarely do I come across someone who does not like this marriage of flavors popping in their mouth. Because of the warmer days of summer, soup isn't the first thing on your mind, but this recipe will combine the two and you will be blown away.

WHAT YOU'LL NEED:

6 Pieces of your favorite bread, a hearty thicker cut bread would be perfect, even french bread would make this nice, 12 pieces of your favorite grilled cheese cheese, 1 15 oz can of petite diced tomatoes, 1 garlic clove (peeled and mashed), 1 small onion (chopped), little salt and pepper, olive oil, 1 tsp red pepper flakes and butter (for toasting)

PUTTING IT ALL TOGETHER:

In a medium saucepan add some olive oil and the chopped onion, cook them on medium low until they breakdown and become caramelized. Add tomatoes, garlic, salt and pepper, red pepper flakes and a little more olive oil. Cook the tomato base until it becomes reduced and thick like a jam or chutney-remove from heat (remove the garlic chunk)

Butter one side of all pieces of bread, lay down a piece of cheese on each slice of bread (the non buttered side) and spread a TBS of the tomato mixture on one side of each slice of bread (on top of a slice of cheese-so the tomato mixture will be in between the cheese slices when you put it all together. Now on a warm, not hot skillet toast your grilled cheese... cooking them slowly assures that the cheese will melt and the flavors will ignite.
