When it comes to plans for this weekend, it seems like everyone I speak with, there is one thing in common: Pumpkin carving. It's a fun family activity where you can let your creative juices flow on the side of a big orange pumpkin. In the past, I used to always discard every part of the pumpkin that wasn't being carved. That is, until I discovered that I really enjoy pumpkin seeds a few years ago. They are fun to make and they are also a healthy snack. This year I will be making a few different varieties, one of which I am very excited to give a taste. That would be the hatch green chile and garlic pumpkin seeds. I am sure we will also make sweeter cinnamon seeds and a salted variety as well.
