Brian’s Pigskin Pigout Recipe
It is going to be brutal cold the next couple of days and I am guessing you could use a nice, easy, warm tummy filling recipe. Last night I tried this one out and the whole family ate every bite. If you like pizza, chicken and pasta, this one will make you smile. Here are all the ingredients you will need to make this tasty treat for 4:
- 4 fresh chicken breasts
- 24 slices of pepperoni
- 8 slices provolone cheese
- salt and pepper
- 1 package of penne pasta
- 1 jar marinara sauce
- 2 tbsp cooking oil
preheat oven to 350
cut a slit to partially fillet the thickest end of the breast and stuff with 4 slices of pepperoni and a slice of provolone,
use toothpick to reseal the breasts.
place them in a saute type pan heated to medium high with the 2 tbsp of oil for 3 minutes each side
then place chicken breasts on a cookie sheet and bake in oven for 20 minutes
get the pasta boiling so it is ready when the chicken is done
after the chicken has cooked 20 minutes in the oven, take it out and cover with 2 more slices of pepperoni and another slice of provolone. Bake in the oven an additional 5 minutes to melt.
Throw a big scoop of pasta on your plate, cover with marinara and set a cooked breast on top. mmmmmm...enjoy!
