I cannot wait for this weekend. Easter is one of my favorite times of the year. The weather is gorgeous and the feeling in the air is very special to me. One of the things I love about Easter is that it tends to be the one holiday that my whole family is together. We get together more for Easter than we do Christmas or any other holiday.

My parents are coming in from North Dakota and my son Nick and his love Kia are driving in from Holyoke. I can't wait for the Easter morning church service with my parents and then we get the ham in the oven and do our traditional Easter brunch of omelettes in a bag. This is the perfect brunch for when you have guests. You set out bowls of cheese, meats, onions, peppers, mushrooms and whatever else you might throw in a an omelette. Get yourself a big pot of boiling water and a box of quart size baggies. Everyone grabs a baggie and writes their name on it. They take their bag and crack 2 eggs in it then add whatever ingredients they want into the baggie. Squeeze the air out and drop in the boiling water for 13 minutes. You open the bag and dump out a perfect little omelette. It is ideal for family gatherings when everyone likes things their way and may not be eating all at the same time. Happy Easter!
