Thanksgiving morning is always a free for all in our house. I try to make thing's easy on myself by making or having easy go to things for breakfast. Yesterday I shared a simple croissant "recipe". Today, we really aren't cooking anything, well for the most part we aren't. It's about easy, handy and simple. The troops gotta eat something or they'll get cranky so try this on for size.

Europeans have simple breakfast down and tasty. Bread-sweet and savory, cheeses, meats, hard boiled eggs and sometimes fruit. This is a perfect and simple way to approach any holiday breakfast. The eggs can be made the night before and the meats and cheeses can be set on a tray and refrigerated till morning. As far as the breads go, whether you serve savory or sweet rolls they can be purchased at your local grocery store. You don't have to make everything, holidays are meant to share with friends and family, not stress and frustration!

Helpful Hints:

The meats I usually choose are Black Forest Ham, Hard Salami and an eccentric meat that
I don't typically serve such as Olive Loaf or Braunsweiger
the cheeses, I like to serve a strong, medium and mild cheese such as Camembert, Cheddar
and Edam
for the breads I like to pick a variety of savory and sweet, the grocery bakery usually has
a great selection, and a dozen to 18, depending on your crowd is typically enough
the hard boiled eggs I make the night before in a big pot and refrigerate overnight, and any left
overs you can turn into deviled eggs if you have time.
A sure fire way to make perfect, not gray yolked hard boiled eggs is to just cover them with cold
water, cover and bring to a boil once the water boils turn off the heat, leave covered and let
sit for 10-12 minutes, rinse with cold water and ta-dah! perfect eggs almost every time. Just as
yesterday, if you do choose to put out fruit stick to the simple stuff, oranges and apples are fine.
another hint... set this in the dining room, nothing fancy, paper plates and napkins with plastic
utensils. This will keep people out of the kitchen while you prepare your big meal.
