Sounds simple and silly, stuffed celery. After all, we've been eating celery stuffed with peanut butter since we were old enough to ingest nuts. But today I offer a different stuffing. This is something that my family always had during the holidays. It was a big production and my aunt Kristie usually supervised or 'controlled' the stuffing of the celery. As simple as the stuffed celery was it still brings back a smile a mile wide on my face. Now my kids either like it or have a strong opposite emotion for the stuffed celery, but because it was on the holiday table every year when I was a kid, it is still there today. And I love it, I hope that you do too.

I couldn't find a picture of my own and this is halfway there, but I felt it was close enough to give you a sample of what this creation might look like.

What You'll Need:

a bunch of celery
8 oz cream cheese, room temperature
1 cup green olives, drained and finely chopped

Putting It All Together:

Now my grandma would have your hide if you didn't "thread" the celery and believe me aunt Kristie enforced this. take a paring knife to the edge of the  celery and pull the threads that usually get caught in your teeth and pull them down and off then cut the celery in about 3 inch sections, mix together the olives and the cream cheese and spoon into celery or put into a storage bag, cut one of the corners and 'pipe' it into the celery.
