This recipe is so easy, its like taking candy from a baby! You already know this 'classic' recipe, all I am doing is adding a protein. A complete food pyramid meal in a pinch. And the best thing is you don't have to wait for a potluck or holiday to serve this 'classic' favorite anymore.

What You'll Need:

3 boneless skinned chicken breasts, cooked and chopped
1 30oz package frozen hashbrowns, thawed
1 10oz can cream of chicken soup
1 tsp garlic powder
1 medium onion, chopped
1/4 cup unsalted butter
1 8oz package shredded cheese, your favorite
1 16oz container light sour cream
2 cups crushed potato chips
(you can substitute potato chips
for plain corn flakes tossed in
melted butter)

Putting It Together:

preheat oven to 350 degrees

melt butter in medium saucepan
and sautee onions till translucent.

pour butter and onions into large
mixing bowl, add all other
ingredients up to potato chips and
mix till well blended.

butter or spray a 9x13 casserole
dish and add mixture.

top with crushed potato chips or
corn flakes.

bake for 45 minutes or until the
liquid bubbles and the chips/flakes
are golden brown.

What's really cool about adapting this 'classic' is that it is subjective to your interpretation of what it should be for your family. If you'd rather use ham, do it.
