As I packed my lunch today, I thought to myself, what kind of crunchy snack do I have to take along?! Oh, Cheez-Its, reduced fat and Hot and Spicy, so I mixed the two in a sandwich baggie and was on my way. (the thought part reduced fat/part spicy, I gotta be saving calories-ha)

Cheeze It Mac and Cheese

HERE'S WHAT YOU'LL NEED:

1 pkg elbow macaroni, 2 1/2 cups of crushed hot and spicy Cheeze-Its, 1 pint of heavy cream, 2 Tbs butter, 1 cup of Monterey Jack cheese and 1 cup of Cheddar

PUTTING IT ALL TOGETHER:

Make the macaroni per pkg instructions, drain and set aside (I like to toss mine with some butter and salt). In a medium saucepan heat the heavy cream, slowly add the cheeses (reserving some of each for the top) with a little salt and pepper, stir till cheese is completely melted. Add cheese sauce to your cooked noodles and stir in 1 cup of the crushed Cheeze-Its, pour the mixture into a baking dish, top with the remaining cheese first then the leftover crushed Cheeze-Its. (if the mixture seems dry, add a 1/4 cup of cream, milk or water) Bake in a 325 degree oven for 20 minutes.
