There is definitely something to be said about comfort food, its comfortable. It's not rocket science, comfort food is simple goodness. A bowl of mashed potatoes smothered in brown gravy, a steamy hot gooey bowl of fresh from the oven mac and cheese and just about any casserole, hot dish concoction you can through into a glass baking dish. Today I am feeling Corny, so let's unleash the corn chip casserole, a bit different from the norm, but cheesy good-that along side a bowl filled to the rim, a quilt, couch and the movie P.S., I love you and we're set!

What You'll Need:

1 lb ground beef
1 small red onion, diced, divided
1 medium sized jar favorite salsa
1 can pinto beans
1 can black beans
1 pkg of taco seasoning
1 can green chilis
4 cups corn chips, such as Frito's
2-3 cups cheddar cheese, shredded
pickled jalapenos
sour cream
a bunch of green onions, chopped
1 avocado, chopped

Putting It All Together:

preheat over to 350 degrees
brown the hamburger and mix
with taco seasoning as per pkg
and set aside
spray non-stick cooking spray to
a 9 x 13 casserole dish
put down a layer of corn chips
top with hamburger meat and half
of the red onion and the green
chilis add some cheese then layer on the
beans-one can at a time, add
some more cheese and pour the salsa
over the whole shebang!
now another layer of corn chips
and cheese.
bake till the cheese is bubbling and
starting to turn golden brown
garnish with green onions, red onions,
sour cream, pickled jalapenos and avocado.
