I would have to say that the pork carnitas is my favorite, when out I order it as often as possible. I have made it at home a few times and thought that Recipe Rescue should take you through the simple steps to this easy slow cooker pork carnitas meal.

WHAT YOU'LL NEED:

1 small pork butt roast, 1/4 cup of canola oil, 2 Tbs of butter, salt, cumin, oregano, thyme, marjoram, 3 whole garlic cloves (crushed) 1 can of Ro-Tel and one medium onion (diced)

PUTTING IT ALL TOGETHER:

Turn your slow cooker on high and add the oil and butter, once the butter has melted completely add the chopped onions and roast then a dash or two of each of the seasoning's, the crushed garlic and the can of Ro-tel. Cook on high for four hours or turn it down to low and cook while you are at work. When you get home shred the pork with two forks and mix thoroughly with the juices.
