Recently there was a mind blowing report that potatoes were the leading cause of obesity, my thoughts on this; anything in excess can cause obesity. We should never deprive ourselves of the things we enjoy unless we have been told medically we can't. Therefore I bring you the firecracker fingerlings, in moderation these potatoes will light your fire.

2 pounds fingerling potatoes
washed, dried and cut in half
lengthwise
1 medium sized lemon, juiced
and divided
1/2 tsp red pepper flakes
2 Tbsp olive oil
2 Tbsp chopped fresh parsley
(you can substitute dried if needed)
1/2 cup mayonnaise
(cut calories and use lite mayo)
2 grated garlic cloves
1 Tbsp Franks Red Hot sauce
s/p to taste

Putting It All Together:

preheat oven to 425

combine half the lemon juice
with the olive oil and red pepper
flakes. Add fingerlings to bowl
and mix till well coated.

place fingerlings on well sprayed
cooking sheet, single layered and
sprinkle with s/p

cook for 20 minutes or until
outside is golden, turn/flip/rotate
fingerlings at 10 minute mark.

While fingerlings are cooking
make the flaming cayenne pepper
aioli as follows;
whisk together the mayo, other half of
lemon juice, garlic, hot sauce and
s/p to taste. place in fridge for at least
ten minutes, this is best if you can
make it ahead of time, but sometimes there
is just no time to plan, right!

when the fingerlings come out of the oven
place on shallow serving platter, sprinkle
with parsley and drizzle half of the aioli
over the top of the HOT fingerlings. Use the
left over sauce for dipping.
