Whether you participate in Lent or not, it's never a bad thing to have a good fried fish recipe. Lent kicks off March 5 and runs through April 17th.

WHAT YOU'LL NEED:

2 pounds of fish such as cod or haddock, all purpose flour, salt and pepper, enough canola oil to fill your 'vessel' half way, 1 bottle of beer, 1 tsp of Cayenne pepper and cornstarch

PUTTING IT ALL TOGETHER:

Let your fillets sit on the counter for about 10 minutes, pat dry with a paper towel and salt and pepper both sides. I a medium mixing bowl mix together the flour, cayenne pepper and beer (put the batter in the fridge till your oil is heated to 350 degrees) Sprinkle each fillet on both sides with cornstarch then dip in the beer batter, hold it over the bowl until the excess batter has dripped off and place in your hot oil, do not over crowd your pot. Flip them after about two minutes and cook for another two minutes. If you are completely submerging the fish in the oil cook for four minutes, longer if fillets are thick. Remove fish when it is golden and set on a cooling rack.

Enjoy! (serve with lemon wedges and malt vinegar or tarter sauce)
