Have you ever had a crazy idea in the kitchen that made you tilt your head and say, "I wonder"? That's where today's recipe has me sitting. I love how you can think of ingredients that taste good separately on a plate and some how marry them into one dish. Let's put our science guy goggles on and head to the kitchen.

What You'll Need:

1/2 lb ground chorizo
(you can also buy in
casings and remove casings)
1 lb hamburger
8 oz bag of cubed
Colby-jack cheese

8 oz shredded Monterrey
jack cheese
2 cans Ro*Tel diced
tomatoes and chilies

cilantro rice
loading...

pre heat oven 350 degrees
take a small pinch of
chorizo and wrap around
one cheese cube
then take a bigger pinch
of hamburger and wrap it
around the chorizo/cheese ball
-make the meatballs as large
or small as you would like
continue process until you
have used up all meat
brown the meatballs on all
sides and put in a casserole
dish. deglaze the pan with about
a half of a cup of water and
drizzle over the meatballs in
the casserole dish. now add
the Ro*Tel, both cans over
the top of the meatballs and
bake for about 20 minutes.
-when there is 5-7 minutes left
top the meatballs with the
Monterrey jack cheese
remove meatballs when the cheese
is bubbly and browning.

Serve with cilantro rice! ;)
