Making quick easy dinners during the school year becomes a top priority almost immediately after the first bell of the season rings. Before there is time to breathe you're fielding voice mails about new bus drivers and routes and back to school nights.  (BTW: with back to school night running from 5:30-8, how are we suppose to feed our children? And what about homework and baths?) It won't be long now where you will see me posting more crock pot recipes, they're just the easiest when we're dealing with our 'taxi' service and new teacher meet and greets. So before I feel like locking myself in my bedroom and not coming out until the end of May, we better hit the kitchen and get dinner on the stove.

What You'll Need:

1 lb ground beef
1 small onion
2 Tbsp butter, unsalted
dash of nutmeg
1 Tbsp flour
s/p to taste
1/2 cup chicken broth
(usually for dishes like
this, I will use bouillon
cubes or granules and sometimes
white wine)
1/2 cup sour cream, lite
1/2 cup half and half

Putting It All Together:

in a dutch oven melt
1 Tbsp of butter and add
the onion, chopped (diced if
you have picky onion eaters)
once the onions are soft add the
ground beef, halfway into cooking
the ground beef add the nutmeg
and s/p once the meat is cooked
through add the chicken broth, once
that comes to a boil add the sour
cream. remove from heat and add the
cream, stir well and put back on
medium heat. mix together the
remaining Tbsp of butter with
the Tbsp of flour and add to pot
-the meat mixture should be lose
but not soupy, add more flour
if necessary, but if you do
remember to simmer longer or
the dish will taste like flour

serve the meat mixture over the
top of mashed potatoes. don't want
to hassle with mashed taters? boil
the potatoes and serve with butter,
everyone can add them to their bowls
squash 'em with butter and add meat mixture.

a good side dish fresh green beans-sometimes
we can get crazy in the kitchen and just add
them to the meat mixture.
