My mom made a few meals that will always bring thoughts of her to my dinner table. I will always remember her laughter in the kitchen and how much love she put into her meals. My top three favorites from my mom were fried chicken, split pea soup and pork and potatoes. Last night I prepared the latter for my family and I actually felt her presence as we talked, laughed and ate. There is just something special about sharing a childhood favorite with your own family, now if only I could get a hold of the kid's paternal grandma's pepperoni casserole recipe! :) (may be a family secret)

What You'll Need:

6 pork shoulder steaks
3 Tbsp unsalted butter
1 Tbsp season all
1 Tbsp garlic powder
1 Tbsp ground pepper
1 Tbsp dried parsley, for garnish
1 medium onion, sliced
4 russet potatoes, unpeeled and sliced
2 cups milk
1 tsp chicken base, optional
flour or wonder for thickening

Putting It All Together:

preheat oven to 350

in a heavy skillet heat a pad of butter and brown the pork steaks, about
1 minute per side and place on a plate till all are done. reduce the heat
and add milk with a Tbsp of flour and the chicken base, if using. whisk together
and let simmer on medium-low until it thickens, stirring occasionally. You may
need to add more thickening agent if it seems too loose. while that is thickening
arrange potatoes, onions and pork steaks in a large casserole dish adding the rest
of the butter amongst the layers and more pepper, if desired. Add gravy to dish,Cover with foil and bake for at least an hour (the potatoes should be fork tender),
I usually bake mine for about 2 hours depending on whats going on around
me. last night I had an appointment so I went home prepped the dish and put it in the oven
and it was all done by the time I returned home, through some petite green beans on the stove,
pulled out a loaf of bread and the butter and ta-dah, dinner!
