The one great thing about colder weather and snow days is the necessity for comfort food. Oh, yes, I said necessity! It's the time of year where we all become bears and its okay we'll lose the extra insulation this spring. Whenever I can throw a great meal together and wrap it in pastry, well its pretty much like winning the lottery. Let's get in the kitchen and get cooking.

What You'll Need:

1 lb hamburger
2 carrots, peeled and diced
1 lb hamburger
2 carrots, peeled and diced
1 celery stalk, diced
1 small onion, diced
1/2 cup frozen peas
1 tsp season all
1 tsp Garlic Powder
1 tsp Ground Pepper
1/4 tsp cayenne pepper
1 tsp beef base
1/2 cup water
2 puff pastry sheets, thawed and
rolled to nearly twice its size
4 cups mashed potatoes

Putting It All Together:

brown the hamburger with the spices add the carrots, celery
and onion with the beef base and water, turn heat to medium-low and
let simmer while you prepare the mashed potatoes. Add the frozen peas and let both
meat mixture and mashed potatoes cool on the counter while you prepare the puff pastry.
PREHEAT OVEN TO 425 DEGREES, it is very important that the oven is to temp when
you put the savory snow day pastries into it.
once the potatoes and meat are room temperature spread each pastry with 2
cups of mashed potatoes and top with meat mixture. Roll up each pastry lengthwise
and place on a greased baking sheet seem side down, brush each pastry with
an egg wash and bake till bubbly and golden brown.

I served this dish with brown mushroom gravy* and french bread.
I sauteed mushrooms and onions in butter and built my gravy up from that with the help
of the beef base, if you haven't discovered beef/chicken base yet, it is a life savor for
soups, casseroles and just about everything else I can think of.
