Pull your favorite steak from the freezer or pick it up at the grocery store and let's get cooking a great weekend meal.

3 medium baking potatoes
1 lb bacon
1 bunch green onions
milk
butter
1/2 cup cheddar cheese, grated
2 bunches fresh spinach
1 medium red onion
4 Tbsp bacon grease
4 Tbsp red wine vinegar
1-2 Tbsp Dijon mustard
s/p to taste
*optional items
candied walnuts
blue cheese crumbles
green apple, cut in matchsticks

Putting It All Together:

Hot Spinach Salad

cook the bacon divide in half
while still bacon grease is still hot,
in a small bowl, whisk in the red wine
vinegar and Dijon mustard

put the washed fresh spinach and
thinly sliced red onion in a large
bowl and top with the warm dressing
Mix well until coated
if you opted for one or more of
the optional items, sprinkle them
on top before serving.

Twice Baked Potatoes
microwave the potatoes till soft
preheat oven to 400 degrees
let stand till cool enough to work
with. cut in half lengthwise and scoop
out the potato flesh and place in bowl
warm milk and butter in microwave and
add to the potato and mash till creamy
fill the potato skins with the 'mashed'

potatoes, top with cheese and crumbled bacon.  Bake in oven till the cheese is melted top with chopped green onions

And don't forget the steak!
