Year after year we joke about the meat on a stick at the Stampede, but every year, we stand in line and can't wait to sink our teeth into the copious amounts of meats offered on a stick. This year will not be any different. But if you can't wait one more day, let's get cooking tonight some meat on a stick.

What You'll Need:

4 bone-in loin chops
1/2 fresh lime juice 4 limes
zest of one lime
1 1/2 tsp kosher salt
1/2 tsp garlic powder
1 chipotle chili in adobo
sauce, chopped.

Putting It All Together:

in small bowl mix
together lime juice,
lime zest, garlic powder
and salt.

pour half into a zip top
bag with the pork chops

to the bag add the chipolte
chili.

let rest in fridge 6-24 hours

Soak 8 bamboo skewers in water
for 10 minutes.
skewer each pork chop with two
skewers for better handling

cook till internal temp is 145,
coat with remaining marinade and
let rest for five minutes.
