The best thing about making bbq sandwiches like these is the mess factor. There is very little mess, nobody is assembly a sandwich and bbq sauce doesn't end up on the carpet. Another plus, they are a great snack that packs a filling punch.

This unconventional recipe is tasty and compact. Have fun and enjoy the game.

What You'll Need:

2 pkg of biscuits for a total of 16 sandwiches, 1 whole chicken you cook or 1 rotisserie chicken from your favorite grocery store, 1 pkg of mac and cheese cooked according to pkg instructions, 1 jar of your favorite bbq sauce, 1 small onion diced fine, dash of hot sauce

Putting it all Together:

pull all the meat from the chicken and shred it by hand. In a medium skillet saute onions with a bit of oil add the chicken when the onions are see through followed by the bbq sauce and the dash of hot sauce. Stir and let simmer for 10 minutes then take off of the heat and let cool while you prepare the biscuits. Put a little flour on the counter and roll out each biscuit till they each are about the size of a bread plate. Using an ice cream scoop or something similar put a scoop of the chicken mixture on top of the biscuit followed by half a scoop of cooked and cooled mac and cheese. Fold all ends into themselves, pinching to securely close. Place seam side down on a baking sheet either sprayed with cooking spray or lined with parchment paper. Cook at 375 for about 12 minutes or longer, just til the biscuits are golden brown.

Tips

I like to brush mine with a little melted butter when they come out of the oven and sprinkle them with coarse salt.

This recipe will also work well with beef and pork.  With the pork instead of mac and cheese you could add a bit of sauteed cabbage and with the beef a few roasted or fried potatoes per sandwich instead of the mac and cheese add a great taste too.

This is also a great recipe to make ahead, just pop in a warm (170 to 200 degrees) oven about half an hour before your event.
