Carbs are my friend and my enemy, so at least twice a week I try to make a delicious meal for dinner without them. Here is a great recipe that will please the crowd and no one will notice there weren't any noodles. Okay, Colton usually notices, but he just eats extra meatballs. (and no I don't let him throw them on a tortilla)

What You'll Need:

Meatballs
1 Lb of ground turkey
(this will make about
12 meatballs slightly
bigger than a golf ball,
if you need more than that
for dinner double this recipe)

turkey meatballs, raw
loading...

1 tsp oregano
1 tsp basil
1 tsp garlic powder
1 tsp thyme
1 tsp olive oil
dash of s/p
1/4 cup Italian panko breadcrumbs
1 large egg

Zucchini "Spaghetti"
4 medium-large zucchini
1 Tbsp olive oil
1 tsp oregano
1 tsp basil
1 tsp garlic powder
1 tsp thyme
dash of s/p

Putting It All Together:

Meatballs
mix together the turkey,
seasoning's and oil. add
the egg,slightly beaten and
breadcrumbs-combine and form
meatballs.
cook the meatballs with a
dash of oil in an oven safe
medium skillet till brown on all sides
(to keep them moist and to
remove the bits from the skillet
I add a cup of chicken broth just as
they are halfway done)
place in oven to finish cooking

Zucchini "Spaghetti"
preheat oven to 350
slice in thin 4 inch strips
toss in bowl with seasonings and oil
place on two cookie sheets lined with
foil and sprayed with cooking spray or
wiped with oil.
bake for 30 minutes or until slightly
brown and tender.
