One of the greatest things about hash is that you really can't go wrong with the ingredients. Hash is very similar to Ratatouille. Typically the latter is served meatless and the former is mixed with meat. But, both dishes can take on Tofu, Chicken,  Hamburger etc... While Ratatouille is tomato based, Hash is based on potato. Tomato-potato; okay that sounded a lot funnier in my head, and with that said let's get cooking.

The beauty of hash is that you can add to your base any vegetable that you like, as many or as little. The entire flavor profile you create is yours. This is just one of the ways that I enjoy this timeless dish. By the way, this can be a side dish or a main meal. If you're shooting for it being the main course, beef up the ingredients so there's plenty to go around and serve with bread.

4 medium baking potatoes
1 13-15oz can/jar water packed
artichoke hearts, drained, rinsed
and rough chopped
4 cloves of garlic, chopped
1 medium onion, chopped
2 petite yellow bell peppers
2 small zucchini's, chopped
2 small yellow squash, chopped
s/p to taste

Putting It All Together:

heat oil in a large
saute pan and add onion.
cook till translucent and
add potatoes. cook till potatoes
start to soften (cover for 5 minutes
to speed things up)

Add zucchini, yellow squash and petite
red peppers. once they begin to
break down add the garlic.

cook for 3-5 minutes and add
artichoke hearts. continue
cooking until artichoke hearts
are heated through.
