Dinner

I have so many, but also have a few favorite restaurants in Fort Collins. There are places where I love to sit on the patio, visit with waitstaff and dive into my favorite dishes, how about you?

School starts and the relaxed summer schedule goes out the door. You want to make dinner, but now you have to make dinner and it has to be done by a certain time cause there is homework, sports, baths and bedtimes-what's a family to do? Smash it up with a hamburger dish that is done in a dash.

There's no skimpy on these skinny pork chops, eat and be merry. I know that we've talked before about my love of pork and let me tell you these are yummy. I used to always bread my pork chops, kind of chicken fry them, but found out that I like them just as much undressed.

Making casseroles are just about as much fun as using the slow cooker, nothing like putting everything in a baking dish, throwing it in the oven and starting the laundry and soon homework help.

Potatoes should be on the menu 5 out of 7 days they are so yummy. How do you make your potatoes... boiled, fried, mashed... it's all good. I think that you will like these tasty potato cakes, they go with everything.

Lucy is my cousin in Colorado Springs and she is a fantastic cook with a warm heart and an amazing family. Recently we went to Guy and Lucy's house for a special celebration, they really know how to keep the family fed (thanks Shawn for the grand champ beef). Amongst the wide assortment of fresh salsa's, chips and more there it was, the most incredible shrimp pasta salad.

I was just talking to Josh, our front end guy here at the station and he was talking about how much he and his wife love using the slow cooker for meals, I never think of it, but it is a great way to get dinner out of the way without any just walk in the door chaos after work. So something really simple is pork chops and taters in the slow cooker, the cat could probably get this started for you while you're out.

I can't even begin to tell you how much I love Fleischkuekle. This dish is like a kraut burger without the kraut, I know what you're thinking "then why bother", but trust me, this is some good gotta have some food.... so come on, it's time for some Fleischkuekle!
