Todd & His Wife Made a New Soup Over the Weekend & Loved It
My wife, Jenny, and I tried a new soup recipe over the weekend and it turned out to be a keeper. By the way, they are not all keepers. Jenny was reading an issue of Better Homes and Gardens and found a crock pot recipe for Tuscan Tortellini Soup that looked really good, so we decided to give it a try.
The soup includes chicken broth, veggies, tortellini, kale, and a splash of cream. The recipe called for fennel, which we substituted with celery. I think it was a good trade off. A little more good news: Tuscan Tortellini Soup is less than 300 calories.
