Vindeket Foods has always operated outside of the norm. Unlike a typical grocery store, the non-profit provides rescued food that would have otherwise been discarded by a regular market.

So, it's no surprise that the organization has adapted to the pandemic's unique circumstances in order to preserve its core mission: fighting food waste.

"Back when the pandemic was striking...we pretty quickly overnight developed a COVID plan. We're able to really move a lot of food and really help get a lot of food out to folks," said Nathan Shaw, founder of Vindeket Foods, in our "Tuned In to NoCo" interview. "We've just been bobbing and weaving with it, trying to do our best to keep doing the things we do best, which is rescuing food and feeding the community."

Shaw credits Vindeket's flexibility to the support of the Northern Colorado community, which has continued to show its passion for repairing the local food cycle.

These efforts have allowed the organization to combat flaws in the U.S. food system, where $161 billion worth of food is currently wasted each year.

"We're really grateful for the support of local organizations and local individuals who remain faithful to coming and shopping," said Shaw. "...it's been really cool to see the generosity of the public stepping up in this time."
