Just because I have changed my life with the help of Benchmark Medical Group in Windsor and lost over 100 lbs doesn't mean I don't crave some decadent deliciousness now and then. Just because I am watching what I eat doesn't mean my whole family should be deprived so some goodies still need to be created now and then and there is nothing that smells quite as good as some type of dessert cooking in the oven.

I love the taste and smell of lemon so when I saw a recipe for lemon brownies I could not resist. I broke these out a couple of years ago but ran across a picture of them and it brought to mind a time past when I had a very special and loving relationship with these tart and tasty squares of happiness. Here is what you will need.

Brownie batter

3/4 cup flour
3/4 cup sugar
1/4 tsp salt
1 stick unsalted butter softened
2 eggs
2 Tbsp lemon zest
2 Tbsp lemon juice

Lemon glaze

1 cup powdered sugar
4 Tbsp lemon juice
8 tsp lemon zest

Preheat oven to 350 and grease a 8×8 pan

In a bowl, beat the flour, sugar, salt and butter until combined

In another bowl whisk the eggs, lemon zest and lemon juice until combined. Pour in flour mixture and beat at medium speed for a couple minutes until smooth.

Pour into baking dish and bake for 25 minutes then allow to cool completely.

After they have cooled make the glaze and spread 1/2 over the brownies and let sit until glaze sets then cover with the other half of the glaze. Enjoy
